Apple Stuffed Sweet Potato Balls
Instructions
- Wash, peel and cube sweet potatoes. Boil cubed sweet potatoes for 15 minutes. Drain.
- Mash cooked sweet potatoes and combine with 1/4 cup of brown sugar and milk (I use my handheld electric beater. Beat until mixture is creamy. Cover bowl with plastic wrap and place in the refrigerator.
- Wash, peel, core and cube apples. Heat butter in a saucepan over medium heat. Add apples, 1/4 cup brown sugar, and cinnamon. Cook apple mixture until apples are tender (about 10 minutes). Let mixture cool.
- Take cooled down mashed sweet potatoes from the refrigerator. Scoop out about a tablespoon of mixture and form into a ball. Stuff ball with about a teaspoon of apple mixture and form into a ball.
- Fill the oil in medium sized saucepan over medium heat. Gently drop a few of the balls into the hot oil and fry 3-4 minutes until golden brown. Remove with tongs and drain on paper towels. Serve immediately.
Recipe Notes
I make mashed sweet potatoes as a side dish pretty often and I thought this would be a great way to use the leftovers. This reminds me of the fall and you can serve it as an appetizer or dessert.
