Apple Stuffed Sweet Potato Balls

I make mashed sweet potatoes as a side dish pretty often and I thought this would be a great way to use the leftovers.  This reminds me of the fall and you can serve it as an appetizer or dessert.

Ingredients
  • 4 sweet potatoes
  • 1/2cup brown sugar, packed
  • 2 apples
  • 1/2cup milk
  • 1tsp ground cinnamon
  • 2tbsp butter
  • 1/2cup flower
  • vegetable oil
Instructions
  1. Wash, peel and cube sweet potatoes. Boil cubed sweet potatoes for 15 minutes. Drain.
  2. Mash cooked sweet potatoes and combine with 1/4 cup of brown sugar and milk (I use my handheld electric beater. Beat until mixture is creamy. Cover bowl with plastic wrap and place in the refrigerator.
  3. Wash, peel, core and cube apples. Heat butter in a saucepan over medium heat. Add apples, 1/4 cup brown sugar, and cinnamon. Cook apple mixture until apples are tender (about 10 minutes). Let mixture cool.
  4. Take cooled down mashed sweet potatoes from the refrigerator. Scoop out about a tablespoon of mixture and form into a ball. Stuff ball with about a teaspoon of apple mixture and form into a ball.
  5. Fill the oil in medium sized saucepan over medium heat. Gently drop a few of the balls into the hot oil and fry 3-4 minutes until golden brown. Remove with tongs and drain on paper towels. Serve immediately.
