Birthday Cake Truffles

I recently made way too many cupcakes for a party.  I knew having a dozen frosted cupcakes in my home was dangerous so I decided to do something creative with them; I’m a big fan of “repurposing” leftover desserts.  I made these fun cake truffles out of the cupcakes and brought them to work.  Delicious! I actually used my Vanilla Cupcakes with Fluffy Vanilla Frosting but you can use any cake and frosting you’d like.

Ingredients
  • 12ounces white-chocolate chipsdivided
  • 2-3drops pink food dyeor color of choice
  • 1dozen vanilla cupcakes
  • 2cups buttercream frostingenough to frost 1 dozen cupcakes
  • 1/2tsp coconut oildivided
Instructions
  1. Place cupcakes & frosting in food processor, pulse until mixture is smooth.
  2. Scoop out mixture and roll into balls (about 1 tbsp) each. Place on wax paper lined baking sheet. Keep cake balls in fridge for at least 2 hours or overnight.
  3. Divide white chocolate chips in two microwaveable bowls with 1/4 tsp of coconut oil each. Melt mixtures in microwave for 20 second intervals until chips are melted (an0out 60 seconds). Mix until smooth.
  4. Squeeze 2-3 drops of food coloring in one bowl and mix until color is evenly distributed.
  5. Take cake balls out of fridge. Take one and cover in melted white chocolate. This can be messy but I use Wilton Candy Dipping Tool Set which makes it MUCH easier. You can find them at http://www.wilton.com/wilton-candy-melts-dipping-tools-1904-1017/1904-1017.html
  6. Place coated cake ball back on wax paper. Drizzle melted pink chocolate on cake ball. You can be creative with colors. Place coated cake balls back in the fridge for 1 hour or until the chocolate is hardened.
