Chocolate Almond Espresso Bars
A couple years ago we stayed at the Kingsleigh Inn in the Bar Harbour area of Maine. The owners Pamela & Bryan were such gracious hosts and the food they served was AMAZING. These bars were a favorite for me so I had to get the recipe. I've adapted it slightly.

Ingredients
Crust & Topping
- 1 1/4 sticks unsalted butter, softened
- 2/3 cup dark brown sugar
- 1 1/2 cup flour
- 1/2 tsp salt
- 1/2 cup whole almonds, toasted & coarsely chopped
Filling
- 1 1/2 tsp tsp instant espresso powder
- 1 1/2 tsp pure vanilla extract
- 3 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 3/4 cuo semisweet chocolate chips

- Bake 30-35 minutes at 350 degrees until edges of crust are golden. Cool in pan on wire rack then cut into squares and enjoy!
