Colossal Apple Spice Cake Pops

I wanted to incorporate my love of baking into my wedding somehow, but I knew that preparing the cake & desserts would add just a little too much stress for me on my special day. Instead I thought it would be a particularly special touch to create the favors. I was able to prepare them ahead of time and box them up in a cute way. For 40 cake pops, I multiplied the recipe below by six.

Ingredients
  • 1box Spice Cake Mix
  • 3 large eggs
  • 1/4cup vegetable oil
  • 1/2cup water
  • 1/2tsp apple flavoringfound at any craft store
  • 1/2jar cream cheese frosting
  • 1lb white chocolate wafers(for coating)
  • blue dye
  • green dye
  • gold sprinkles
Instructions
  1. Preheat oven 350 degrees. Combine cake mix, eggs, oil, water and apple flavoring. Beat until combined. Pour batter into greased cake pan. Bake for directed time on the box. After the cake is baked, cool for at least 1 hour.
  2. Break cooled cake into chunks and place half the cake in the food processor. Pulse until the cake turns into fine crumbs. Continue with the remaining of the cake. Place all the crumbs into a bowl.
  3. Add 1/2 of the jar of frosting into the bowl of cake crumbs. Combine them well with your hands. It’ll be messy…but stress relieving.
  4. Fill 1/2 cup measure with the cake mix/frosting mixture, then roll it into a ball. Place balls on a cookie sheet lined with parchment or slip mat. Cover cookie sheet with saran wrap and place in the fridge for 30 minutes.
  5. Place a 1/4 cup of the white chocolate in a microwave safe bowl and for nuke for 30 seconds. Stir chocolate then nuke for another 30 seconds. Stir again until white chocolate is smooth. Dip the tip of the stick in melted white chocolate and push into chilled cake ball. Repeat with the remainder of the cake balls. Chill again for 30 minutes.
  6. Melt the remainder of the white chocolate the same as above until smooth. Add a drop of blue dye and a drop of green dye into the melted white chocolate. Mix until the chocolate become a teal or turquoise color.
  7. Dip chilled cake pops into the white chocolate until the ball is fully coated then place on the same cookie sheet. Sprinkle cake pops and place back in the fridge for another hour.
  8. For my wedding, I boxed these up in candy apple boxes and added a tag and bow.
