Gingerbread Sandwiches with Caramel Buttercream

I made a ton of cookies this holiday season..it’s my stress reliever.  Out of all of them, these were my favorite.  They will knock your socks off!

Ingredients
  • 1cup granulated sugar
  • 3/4cup shortening
  • 1 egg
  • 1/4cup molasses
  • 2cups flour
  • 2tsp. baking soda
  • 1tsp. ginger
  • 1tsp. cinnamon
  • 1/2tsp. cloves
  • 1/3cup granulated sugar
  • 1/2cup butter, softened
  • 1/2cups caramel sauce
  • 3 – 4cups powdered sugar

  1. In a large mixing bowl, cream together sugar and shortening. Add in egg and molasses. Mix until well-combined.
  2. In a medium bowl, whisk together flour, baking soda, and spices until well-blended. Add flour mixture to mixing bowl, beating until well-combined.
  3. Roll dough into 1-inch balls and roll the balls in granulated sugar. Place them 2 inches apart onto ungreased baking sheets.
  4. Bake at 350 degrees for 8-10 minutes. Cool on wire racks.
Caramel Buttercream
  1. In a large mixing bowl, beat butter and caramel sauce til blended. Add enough powdered sugar that the frosting is thick and fluffy, but spreadable. Beat until fluffy.
  2. Make cookie sandwiches by spreading the bottom of one ginger cookie with buttercream, and topping it with another cookie.
