Keto Pizza
We started a Keto diet three weeks ago and while it's been an effective weight loss method, I miss several foods pretty badly. This recipe for pizza is delicious, filling and most importantly, satisfies my craving for pizza while filling me up. I used pepperoni and salami as toppings but you can you any topping you'd like. 4 grams of net carbs per serving.

Ingredients
Pizza Crust
  • 4 cups mozzarella, whole milk shredded
  • 1 cup coconut flour
  • 4 eggs
  • 4 oz. cream cheese, softened
  • 1/2 tsp basil, dried
  • 1/4 tsp parsley, dried
  • 1/2 tsp oregano, dried
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

  • 1/2 cup pizza sauce
  • 1 cup mozzarella, whole milk shredded
  • 12 slices pepperoni sliced
  • 12 slices salami, deli sliced

  • 4 eggs
  • 4 oz. cream cheese, softened

Instructions
Pizza Crust
  1. In big bowl, whisk together coconut flower and spices, set aside.
  2. In separate bowl, microwave mozzarella and cream cheese on high for 2 minutes.
  3. Once cheese mixture is done cooking in microwave, mix together using rubber spatula. Combine cheese mixture with coconut mixture and mix (you will need to use your hands to get it fully incorporated)
  4. Scatter about 1/2 tsp of coconut flower on a clean work surface and knead your pizza dough until all the ingredients are fully incorporated.
  5. Roll out the dough until desired thinness.

  6. Carefully transfer dough to pizza sheet. The best way to do this is place the rolling pin near the edge of the rolled dough. Lift the edge of the rolled dough and wrap it around the rolling pin. Roll the rolling pin over the dough so the rest of the rough wraps around the rolling pin - roll loosely. Then, hold the rolling pin above the pan and position the visible edge of the dough near the edge of the pan. Unroll the dough and your good to go.
  7. Once your dough is on the pan, form it into a circle pinching the crust around the edge of the pizza.

  8. Bake pizza at 425 degree preheated oven for 8 minutes.
Assembling Pizza
  1. After the pizza has cooked for 8 minutes, take out of oven and add your toppings. I used pizza sauce (Classico), shredded mozzarella, pepperoni and salami. Cook for 7 more minutes until golden brown.
  2. Once cooked, cut into 8 slices.
