Mackerel Cakes
After catching about a dozen mackerel's on a fishing trip in the Florida Keys, we had to figure out what to do with them. One of the recipes we made were these mackerel cakes and they were really good.

  • 1 cup panko bread crumbs
  • 1/2 cup onion finely chopped
  • 1 large egg lightly beaten
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 1/2 cups fresh mackerel finely chopped
  • 1 tbsp butter

Instructions
  1. In a large bowl, combine bread crumbs, onion, egg, mayonnaise, lemon juice, fold in mackerel. Season with salt & pepper.
  2. Shape mixture into 2-in. balls, then flatten into a 1/2 inch thick patty. They don't have to be perfectly uniform - see picture 🙂
  3. In a large nonstick skillet, heat butter over medium-high heat. Add crab cakes; cook 4 minutes on each side or until golden brown.
