Mackerel Cakes

After catching about a dozen mackerel’s on a fishing trip in the Florida Keys, we had to figure out what to do with them.  One of the recipes we made were these mackerel cakes and they were really good.

Ingredients
  • 1cup panko bread crumbs
  • 1/2cup onionfinely chopped
  • 1 large egglightly beaten
  • 1/4cup mayonnaise
  • 1tablespoon lemon juice
  • 1 1/2cups fresh mackerelfinely chopped
  • 1tbsp butter
Instructions
  1. In a large bowl, combine bread crumbs, onion, egg, mayonnaise, lemon juice, fold in mackerel. Season with salt & pepper.
  2. Shape mixture into 2-in. balls, then flatten into a 1/2 inch thick patty. They don’t have to be perfectly uniform – see picture 🙂
  3. In a large nonstick skillet, heat butter over medium-high heat. Add crab cakes; cook 4 minutes on each side or until golden brown.
