Bacon Spinach Waffles

These turned out perfect on my first attempt which never happens. You could make them smaller and serve them as appetizers or larger for lunch, brunch or a side dish. You could also leave out the bacon to make them vegetarian.

Ingredients
  • 4 slices bacon cooked & crumbled
  • 1/2 cup cauliflower riced
  • 1/2 cup frozen chopped spinach
  • 2 eggs
  • 1/2 cup mozzarella cheese shredded
  • 1/2 cup cheddar cheese shredded
  • 1 tbsp bacon fat or melted butter
  • 1/4 cup Parmesan cheese grated
  • 1 tsp onion powder
  • 1 tsp. garlic powder

Instructions
  1. Cook bacon and drain on paper towel. Reserve a tablespoon of the bacon fat and crumble bacon.
  2. Thaw and squeeze out as much water as you can from the spinach and add to a bowl.
  3. Rice your cauliflower (or use pre riced cauliflower) and add to the spinach along with the beaten eggs, cheeses, onion powder, garlic powder and bacon pieces. Mix well.
  4. Grease your waffle iron
  5. Add the mixture to your waffle iron and make as you would regular waffles.
  6. This recipe made 2 large waffles or 6-8 small waffles (I used 2/3 cup of mixture per waffle and ended up with 6 waffles). I cooked each waffle for 6 minutes and they turned out perfect.
