Shortcut Frosted Blueberry Cobbler

With only 5 ingredients, this recipe is a cinch. If you need a last minute dessert or brunch dish, this is perfect. You can also change the cake mix flavor or pie filling easily.

Ingredients
  • 1 15.2 ozbox white cake mix
  • 1/2stick unsalted butter, melted
  • 2 large eggs
  • 1 21 ozcan blueberry pie filling
  • 1/2container white frosting
Instructions
  1. Preheat oven 350 degrees. Coat a 9 x 13 inch baking pan in baking spray, set aside.
  2. In a large bowl, mix together cake mix, melted butter and eggs until combined. Dough will be stiffer than regular cake batter.
  3. Take 2/3 of the dough and press evenly into the bottom of the pan.
  4. Pour the pie filling and spread with a rubber spatula evenly over the dough.
  5. Sprinkle the remaining 1/3 of the dough in clumps over the blueberry filling. Bake in a 350 preheated oven for 25 minutes.
  6. Microwave the frosting for 20 seconds, stir. After the cobbler has cooled, drizzle the melted frosting over the cobbler. Cut into squares.
