Shrimp & Chorizo Dumplings
Since dumplings require some patience, I rarely make them but they are so worth it. The dumpling filling alone is delicious, but it pays off the make the dumplings. They are great for an appetizer or a main entree.

  • 1 lb ground pork
  • 1 link chorizo (1/2 pound)
  • 1 lb raw shrimp
  • 1 cup coleslaw mix (cabbage, carrots, etc)
  • 1/4 cup chopped scallions
  • 1 package wonton wraps (in produce section)
  • 3 tablespoons soy sauce
  • 2 garlic cloves, minced
  • 1 tbsp ginger (minced) (or use ginger in a squeeze tube)
  • 1 tbsp extra virgin olive oil
Dipping Sauce
  • 1 cup soy sauce
  • 1/2 cup hoisin sauce
  • 1/4 cup chopped scallions

Instructions
Dumplings
  1. Heat olive oil in large skillet over medium heat. Add chopped garlic and cook until tender (3 minutes).
  2. Add ground pork and cook until no longer pink. Add ginger and soy sauce.
  3. Add chopped chorizo and cook another 3 minutes.
  4. Add coleslaw mix and scallions, and mix ingredients in skillet. Let cook for about 3 more minutes until cabbage is a bit tender.
  5. Add chopped shrimp and cook for 2 more minutes. Take skillet off of heat.
  6. Remove wontons from package (start with about 6 or so). Lay the them on the counter and spoon about 1 tablespoon of mixture onto wonton. Brush the edges of each wonton with water and fold one side over to form a dumpling. Seal with your fingers and press edges with a fork.

  7. Fill up a large sauce pan with water and place on the stove on high heat. Wait until the water is at a strong simmer (almost boil). Add 4-6 dumplings to the water. They will take just a couple minutes to cook (they will rise to the top of the water).
  8. Remove the dumplings from the water with a slotted spoon and place on a plate to cool for a couple minutes. Serve with dipping sauce. If you use all the filling you prepared, these will yield about 4-5 dozen dumplings. I'm impatient and never fill them all. The filling is also great by itself or with rice.
Dipping Sauce
  1. Combine three ingredients in small bowl. Dip you dumplings and enjoy!!
