Almond Butter Cookies
I have a love affair with cookies and prefer them soft, not crunchy. Although peanut butter cookies are fantastic, I always have almond butter on hand so I thought I'd replace the standard PB. It adds an extra bit of protein to these fabulous cookies so I can also experience a bit less guilt.
Instructions
- Cream the butter and sugars together in the bowl with either a hand mixer of a stand mixer with a paddle attachment.
- Add the almond butter, egg, and vanilla. Mix well and scrape the bowl.
- Combine the flour, baking soda, and salt. Add to the butter mixture all at once and mix until just incorporated.
- Scoop dough onto silicone or parchment lined baking sheets.
- Bake at 350 degrees for 10 to 12 minutes or until just set. Allow cookies to cool slightly on the tray before transferring them to a cooling rack.
