Almond Butter Cookies

I have a love affair with cookies and prefer them soft, not crunchy.  Although peanut butter cookies are fantastic, I always have almond butter on hand so I thought I’d replace the standard PB.  It adds an extra bit of protein to these fabulous cookies so I can also experience a bit less guilt.

Ingredients
  • 1/2cup unsalted butter at room temperature
  • 1/2cup granulated sugar
  • 1/2cup Brown Sugar
  • 1/2cup almond butter
  • 1 large egg
  • 1tsp vanilla extract
  • 1 1/2cups all purpose flour
  • 1tsp baking soda
  • 1/2tsp salt
Instructions
  1. Cream the butter and sugars together in the bowl with either a hand mixer of a stand mixer with a paddle attachment.
  2. Add the almond butter, egg, and vanilla. Mix well and scrape the bowl.
  3. Combine the flour, baking soda, and salt. Add to the butter mixture all at once and mix until just incorporated.
  4. Scoop dough onto silicone or parchment lined baking sheets.
  5. Bake at 350 degrees for 10 to 12 minutes or until just set. Allow cookies to cool slightly on the tray before transferring them to a cooling rack.
