Chocolate Dipped Double Peanut Butter Cookies

Ingredients
- 2 ¼ cups all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup unsalted butter room temperature
- ¾ cup Sugar
- ¾ cup light brown sugar packed
- ½ cup smooth peanut butter
- 1 tsp vanilla extract
- 2 eggs
- 2 cups peanut butter chips
- 1 cup dark chocolate chips

Instructions
- Preheat oven 375 F.
- Combine flour, baking soda, and salt. Set aside.
- Beat the butter, sugar, brown sugar, egg and vanilla extract in a large mixer. Add eggs, one at a time.
- Beat in flour mixture, gradually. Once combined, stir in peanut butter and peanut butter chips.
- Bake for 10-11 minutes and cool on rack.
- Melt dark chocolate in a microwave safe bowl for 30 second intervals until completely melted and smooth. Dip cooled cookies and let harden on wax or parchment paper lined cookie sheet (about 30 minutes)
Recipe Notes
These cookies have peanut butter, peanut butter chips and would be delicious on their own. However being dipped in chocolate makes them even better!
